The traditional Japanese confectionery is famous for its monaka (sweet bean jam sandwiched between mochi wafers) shaped as a onigawara (traditional demon designed gargoyle) excavated in Dazaifu Government Office Ruins. The must-try item for this time of year is “Amaou Strawberry Daifuku Monaka (あまおういちご大福最中)” which is only on sale for a limited time from late November to March. The design of the sweet is very one-of-a-kind you can’t help posting on your Instagram. The highest graded qualify Amaou strawberry (local strawberry brand mainly grown in Fukuoka), bean jam carefully made at its own kitchen and chewy rice cake are sanded by onigawara designed crispy wafers all together. Wafers are made only from carefully selected glutinous rice. ‘Kashidokoro Baien (菓子処 梅園)’ was founded in 1948. From the time of its founding, all sweets have been making by its confectioners’ hands. Among its sweets, “Uso no Mochi (うその餅),” the green perilla-flavored gyuhi (steamed rice flour mixed with sugar and starch syrup) covered by sprinkles made by jonanko (a kind of rice flour) and sugar is the most popular. What makes this sweet very special is the wooden bullfinch hidden inside the gyuhi. Your heart must be melted with the cute bullfinch which seems to have come out from a picture book. As you chew the gyuhi, you can feel the refreshing flavor of green perilla and the sharp sweetness.
