“Pierre Marcolini Ginza Main Store” (ピエール マルコリーニ 銀座本店) is produced and managed by Chocolatier Pierre Marcolini, a purveyor to the Belgian royal family. He himself carefully selects by visiting farms around world, roasts and blends cacao beans. Our recommendation is ‘Marcolini Chocolate Parfait’ (マルコリーニ チョコレートパフェ, 1,760 yen), which consists of eight layers. The popular item here is “Strawberry and Pistachio Espuma Shaved Ice” (苺とピスタチオエスプーマのかき氷). On the shaved ice with strawberry and franboise sauce, which has an exquisite balance of sourness and sweetness, there is a sweet temptation of espuma made from raw pistachio paste from Iran.
