“Pierre Marcolini Ginza Main Store” (ピエール マルコリーニ 銀座本店) is produced and managed by Chocolatier Pierre Marcolini, a purveyor to the Belgian royal family. In the attached café on the 2nd floor, you can enjoy desserts where Pierre’s enthusiasm for cacao is embodied. He himself carefully selects by visiting farms around world, roasts and blends cacao beans. Our recommendation is ‘Marcolini Chocolate Parfait’ (マルコリーニ チョコレートパフェ, 1,760 yen), which consists of eight layers. The original couverture is transformed into different players such as ice cream, cream and mousse in the parfait. In order to enhance the characteristic of each type of cacao, chocolatiers carefully take degree of growth and how they’re processed into consideration when deciding how and which to use. “Parlor Vinefru Ginza” is a café located in Ginza 1-chome and can be easily found with a vivid panting of tomatoes on its exterior wall. If you stop by on a hot sunny day, you’ll think of nothing but ordering its signature giant shaved ice covered by fluffy espuma and homemade fruit vinegar made from fruits sent directly from farms. The popular item here is “Strawberry and Pistachio Espuma Shaved Ice” (苺とピスタチオエスプーマのかき氷). On the shaved ice with strawberry and franboise sauce, which has an exquisite balance of sourness and sweetness, there is a sweet temptation of espuma made from raw pistachio paste from Iran. A cup with a cute contrast of berry red and pistachio green makes this shaved ice look like a big cake.
