At “YUWAERU Honten” (結わえる本店) close to Sumida River, you can experience ‘Nekase Gemmai’(寝かせ玄米®︎, matured brown rice) whose feature is chewy texture and natural sweetness. Brown rice harvested by a contract farmer is cooked in a pressure cooker and left to be well-matured for a couple of days. If you visit during the lunch service, 3 kinds of matured brown rice set meal served with your choice of a side dish and soup prepared with homemade Miso and salted rice malt considering the pairing with the brown rice are available. Located in between Nakamise Shopping Street and Asakusa Station (TS01) of Tobu Skytree Line, “Kanmi Mitsuya”(甘味みつや ) offers authentic Japanese sweets prepared with homemade ingredients. It is famous for Shiratama (白玉, rice cake balls) which are about 3 cm in diameter. As it is served as soon as it’s been freshly made, the chewy texture is even more enjoyable. In addition, the Anko (あんこ, bean jam) and the Kuromitsu (黒みつ, brown sugar syrup) that are essential for the flavor of each menu item are full of the restaurant’s commitment to the quality. For instance, the most popular ‘Kuromitsu Kinako’ (黒みつきなこ) is prepared with Kinako (きなこ, soybean flour) made by grinding home-roasted soybeans in every morning while brown sugar syrup is made from boiled juice of sugar canes from Okinawa’s Hateruma Island and Wasanbon (和三盆, refined Japanese sugar).
