Among them, their hottest menu is the mont blanc ‘紗'(Sha), which is made solely with rare Tanba chestnuts and is said to be about 1 % of Japanese chestnuts. In order to keep the original flavor of chestnuts, it seems that the sugar is in small amounts as much as possible. You can smell the chestnuts and sweetness firmly when you put it in your mouth soon. As you eat the luxurious chestnut paste, a meringue made from Wasanbon (Japanese refined sugar) and sugar cane appears from the inside.
