Nestled amid the abundant natural beauty of Tsunan, coffee & gallery mori cafe awaits at the end of a tree-lined path marked by a charming sign. As you make your way through the woods, a building resembling a secret hideaway in the forest comes into view. Step inside, and you will find a peaceful space filled with the warmth of wood. Through the windows, you can admire carefully tended gardens and trees that take on a different appearance with each season. Spending time here while listening to birdsong and leaves rustling in the breeze offers a welcome escape from the bustle of everyday life.
A must-try is the owner’s carefully roasted house coffee. Each aromatic cup can be enjoyed at a leisurely pace in a cozy setting complemented by ceramic cups and wooden cutlery. Pair it with a hearty serving of French toast topped with whipped cream, jam, and ice cream for a satisfying café break. In warmer weather, the coffee float is another excellent choice. Hegi Soba at Kojimaya Sohonten, Born from Niigata’s Textile Heritage

One long-established restaurant that has continued to preserve its traditional flavor is Kojimaya Sohonten, headquartered in Tokamachi City. The defining feature of hegi soba is the use of funori, a type of seaweed, as a binding agent for the noodles. In the Uonuma region, which flourished as a center of textile production, funori was once used to size woven fabrics. These natural conditions gradually develop the rice’s distinctive stickiness and umami. The opportunity to enjoy carefully cultivated rice in freshly made onigiri is what makes this shop so appealing.
Start with the salt onigiri, which allows the rice’s natural sweetness and aroma to shine through. Bite into the plump grains, and the distinctive umami of Koshihikari deepens as you chew. A wide variety of fillings is available, including kombu, nozawana greens, miso pickles, salmon, cod roe, spicy cod roe, and pickled plum.
