“Sannana Miso” was opened by the owner who fascinated with a Japanese fermentation culture in 2017. Apparently, this name comes from that the temperature is 37 (3: san, 7: nana) degrees during making koji. Their fermented foods such as miso and koji, amazake and salted koji are handmade one by one with love and sincerity. In particular, miso made only from Enrei soybeans and rice koji from Fukui prefecture and Akaho no Tenshio (salt) is the exquisite product with a sweet but refreshing taste. In addition to shopping, it might be a good idea to experience making amazake (available throughout the year) or miso using freshly steamed soybeans from Ikedamachi (available from October to June). After letting miso rest until becoming your favorite aging condition, you can enjoy it for a long time in various ways, such as dipping raw vegetables into it and using it for cooking.
