“Keiran Somen (鶏卵素麺)” is a signature product of ‘Matsuya (松屋)’ which is a long-established Japanese confection shop. The founder, Riuemon, was interested in one of Portugal’s traditional confection ‘Fios de Ovos’ meaning egg thread, learned its cooking way and created Keiran Somen. Even now, they carry on traditional cooking methods and make all of the confection by their hands. It’s also attractive that they’re particular about additive-free, coloring-free and fragrance-free. Made only from eggs and syrup, Keiran Somen is vivid yellow and looks like artwork. The moment you put it in your mouth, you can feel a comfortable texture, a mellow rich flavor of egg yolk and elegant sweetness of the syrup. There are 2 types: Standard one and ‘Tabane’ (Keiran Somen is cut into bite-size and wrapped with kelp). Why not choose your favorite one?

Do you know that Fukuoka prefecture is famous for ‘Amaou Strawberry (あまおう苺)’? So, there is a great variety of sweets using Amaou in this prefecture. From among them, ‘Ito King (伊都きんぐ)’ that declares ‘Professionals processing Amaou strawberries’ can be said to gather attentions as a shop with strawberry sweets which we cannot find anywhere else. ‘Kayanoya (茅乃舎)’ is a shop, which produces items made from carefully selected ingredients from Japan without using any chemical seasoning and preservatives. Most of people loving to cook often buy their authentic broth for home because they can be used in a wide variety of dishes from Japanese dishes to Western ones. “Kayanoya Ago Dashi (茅乃舎あごだし)” and “Kayanoya Iriko Dashi (茅乃舎いりこだし)” are available to get at only shops in Fukuoka. The former uses plenty of fresh flying fish. Kayanoya grills them to bring out its flavor and sweetness, dry and pulverize. After that, they blend 3 kinds of ingredients into it and season with sea salt and soy sauce. On the other hand, the latter mixes 2 types of dried sardine and creates a rich taste and flavor.
