Some restaurants add their original twists and the variety of ‘Soup-less Dandan noodles’ is now so rich. Among the many restaurants you can enjoy the noodles in the city, “Chukasoba Kunimatsu” (中華そば くにまつ) is the one you should try for tasting the original and authentic one. The place was the one that started the ‘Soup-less Dandan noodles’ boom. The combination of its special sauce made from soy sauce and Hatcho Miso (八丁味噌), sesame paste, homemade chilly oil and Sichuan pepper makes the noodle sharply tasted and you come to wanna have another bite continuously. “Youki” offers a single noodle menu; Enjoy its only ramen with secret soup made by stewing ingredients carefully and gently

“Youki” (陽気) was established in 1958. During its lunchtime, the only available noodle menu is ramen.  Its special soup stock made according to inherited recipe from the time of its founding is mainly made from pork bones and some vegetables like garlic, however, the full contents are strictly confidential and never come out from the restaurant. Simply combine the soup stock with soy-sauce based sauce and quickly add the boiled noodles, place some slices of Char-siu pork, bean sprouts and some green onions, then that’ll do. We guarantee that you’ll finish up your bowl without losing your curiosity for another slurp and bite. The medium-thin straight noodles with a pleasant texture brings the secret ingredient of melting soup to your mouth. The fact that the noodles have been loved for over 60 years since its foundation proves that this ramen is definitely a must-try. ‘Onomichi ramen’ (尾道ラーメン) is the ramen that is loved by locals in Onomichi City, the fifth largest city in Hiroshima Prefecture. In general, the soup stock of ‘Onomichi ramen’ is made from seafood in Seto Inland Sea, chicken bones and pork backfat, and flat noodles, green onions, Char-siu pork and seasoned bamboo shoots are sunk in soup. By visiting “Onomichi Ramen Sankou” (尾道らーめん 三公), you can enjoy  ‘Onomichi ramen’ even in the heart of Hiroshima City. The secret of its ramen is the soup that has been kept adding for more than 10 years, that matures richness to the soup. Using Kujo green onions (branded green onion harvested in Kyoto) delivered every morning from Kyoto and high-grade pork back fat with larger grains is the owner’s commitment to the quality of ramen. Besides, because the owner wants customers to enjoy the hot ramen until the last minute, sliced green onion is served on a separate plate. For those who prefer thinner noodles, ramen with thinner noodles is also available.
