“Dorce de Sancho” (どるちぇ ど さんちょ) is a cheesecake specialty store offering homemade cheesecakes made with local ingredients including cream cheese, mascarpone, and Camembert cheese by a Dosanko (道産子, born and raised in Hokkaido) pâtissier. There are always more than 20 kinds of cheesecake available, and since which kind of cheese to use is decided according to seasonal ingredients to go with, you might happen to find rare cheese depending on when visiting. Among available cheesecakes here, what we recommend is its signature tart ‘Toroma-Ju’ (とろま~じゅ) that was finally completed after improving recipes over and over for years. The tart dough baked and rested overnight is filled with the special cheese cream prepared with cream cheese and Camembert cheese both produced in Hokkaido. When eating, take it out of the refrigerator and leave it at room temperature for about 15 minutes so that the cheese cream melts as it overflows from the tart. That’s how the pâtissier wants you to enjoy the cream.
