They carefully select materials with considering the balance between health and nutrition, such as high-quality syrup made from domestically-produced sticky rice, their original blended flour and fresh eggs directly sent from the production area. Moreover, they make castella in their traditional way: craftsmen complete making dough, baking and wrapping by themselves. “Kamadashi Castella (窯出しカステラ)” is hand-baked one by one every day, and has a fine and fluffy texture.
